She likes it a lot.

She's always making recipes and looking for new ways to prepare roast chicken.

Today, Julia is here and she's going to show us a really interesting condiment... -Mm-hmm.

-...a little spicy, called schug.

-It is delicious.

-Yes.

-It is a lot of cilantro, some peppers.

-We're going to use jalapeños.

-Nice.

-Used as a condiment, a sauce, but we were inspired to flavor the chicken with it with a marinade and make a creamy sauce.

-Sounds great.

-So, let's start with a lot of cilantro.

-Yes.

-This is a cup of cilantro.

It's the delicate stems and the leaves.

-Mm-hmm.

-We're going to put it right into the blender, let the blender do all the work here.

We're going to add some -- This is the spice.

This is jalapeños.

It's 3 ounces of jalapeños -- seeds or no seeds.

They're totally up to you.

The seeds and the ribs add the heat.

-Mm-hmm.

-I kept them in.

-Yes.

-Because I know you.

-I like spice.

-A little bit of olive oil.

Just 1/4 of a cup.

Some fresh lemon juice -- 2 tablespoons.

A tablespoon of fresh lemon zest.

-Nice.

-Yeah.

Adds a good punch.

Three garlic cloves -- peeled, trimmed, but let the blender do the work here.

We have 2 teaspoons... [ Sniffs ] ...of ground coriander.

-Gorgeous.

-Mm-hmm.

2 teaspoons of ground cardamom.

-My favorite.

Mmm!

-Cardamom and cilantro I don't often put together, but they're a lovely combination.

-Yes, they are.

-And a teaspoon of table salt.

Onto the blender this goes.

We're going to make it nice and smooth.

Takes about a minute, and I'm going to stop to scrape it down now and then.

-Okay.

I started it on a low speed just to get the chunks -down near the blades.

-Okay.

-I'm going to give it a scrape-down.

Yeah, it's not smooth yet.

Getting there.

Just going to scrape down the sides.

And now you can increase the speed a little bit, now that the big chunks are out of there, and really get it pretty smooth.

That should be pretty good.

Oh!

Get a whiff of that.

-Okay.

Whoo, doggy!

-Now, as I mentioned, some of this is going to be for a marinade, and some is going to be for a sauce.

So I'm going to take out 1/2 cup for the marinade.

-Almost looks like a chimichurri.

-Yeah, right?

Now, that's for the marinade.

This is going to be the sauce, so what's left in the blender.

I'm going to add a little bit of sour cream.

This is 6 tablespoons of sour cream.

We're just going to let the blender incorporate it all for us.

And if you didn't have sour cream, yogurt is also great in this.

Doesn't take long to incorporate that sour cream.

I'm just going to scrape it down here.

Oh, yeah.

This sauce tastes good on anything.

I'm going to set this aside.

We're going to see that later.

I'm gonna bring my spatula over here to the marinade.

-Yes.

-So, here's that 1/2 cup that I reserved.

Into a nice big bowl it goes.

We're going to add just a little more salt to this -- 2 teaspoons of table salt.

Because for a marinade, you really want that salt to help work its way into the chicken.

Helps make the chicken more flavorful, but also hold on to more moisture.

Let's set this aside for now for the main ingredient, Mr.

Chicken.

This is a 4-pound broiler, and we're going to cut this up into parts.

Now, if you didn't want to deal with cutting up a whole chicken, you could just buy parts.

You could do all thighs, all breasts, all drums, -whatever you like.

-Very handy.

-I like having the variety.

So, to cut up a whole chicken, I'm gonna show you how I do it.

-Okay.

Yes.

-Everyone has their own way.

And I learned this kind of recently -- to start with the wings and use the weight of the chicken to open up that joint right there.

-Yes.

-Otherwise, sometimes, you can get too large of a drumette.

Yep.

You can go right through.

There's one.

And there's two.

Now, these little wing tips -- they just really tend to burn.

They don't have a ton of meat on them.

We're going to take those off.

I'm going to put them in the bowl.

They go into the freezer for broth later.

-Always.

-Alright, so, there's the wings.

I'm going to leave them just like that.

Now I'm going to take off the legs.

And it's really just a matter of pulling more than cutting.

You're cutting the skin, but, really, it's just the skin holding it together.

You pop out that joint, spin it around, go back around to that little oyster.

-And there's a little fat demarcation there, too, right around all of the joints.

-Alright, cut that.

So, there's the thigh and the drumstick.

We're going to look for this little line.

Go right through.

Separate those pieces.

Alright, so, what I have left is the breast and the backbone.

-Mm-hmm.

-I'm going to use a chef knife.

-I'm just going to cut down on either side of the breastbone.

-And you could use kitchen shears for this, if you wanted.

-Absolutely.

Alright.

This is destined for the freezer.

I'm going to cut this into four pieces.

That'll just then cook at the same rate as the other small pieces.

So, in half, into two split breasts.

And then each split breast in half, just crosswise.

-Nice.

-Now, my hands are good and chickeny.

-Yes.

-So I'm just going to add them right to the bowl with our marinade.

And you don't have to let this marinade for very long.

Just one to two hours is all it takes.

I did let it go overnight once, and it was just fine.

Obviously, we're going to keep it in the fridge and cover it.

Also going to put that sauce in the fridge until serving time.

♪♪ It is time to cook the chicken.

So I'm going to take it out of the marinade.

I'm putting it in a skillet.

We're going to roast this in the oven.

This is why you need an oven-safe skillet.

Now, if you didn't have an oven-safe skillet, you could use a baking dish.

But I like this skillet.

It transfers heat really nicely.

We're going to put all the pieces in.

And notice I'm putting them in with the skin side facing up.

-Mm-hmm.

-Bone side down.

Because we want that skin to get nice and crisp.

-Yes.

-Just organizing these pieces nice, in an even layer around the skillet.

Now I am going to take any of this marinade that's left in the bowl, just zhuzh it over the top.

-Mm-hmm.

-You don't want any of that flavor left behind.

This is ready for the oven.

Hot oven -- 425 degrees.

We're going to cook it for just half an hour.

And the rack is really close to the top of the oven.

That's just helping to bounce the heat off and focus it on the skin.

♪♪ Oh, yes!

-Mm-hmm!

-That looks good.

Hey, Bridget, while you're there, would you mind putting the broiler on for me?

-You bet.

-Thank you.

Smells good, doesn't it?

-It smells great.

-Yeah, it just smells floral and herbal.

Now, the chicken we're going to test for doneness.

The breasts should register about 160.

Let's see where we're at.

161 on the breast.

-I'll take it.

-Perfect.

You also want to double-check the thighs, because you want them to be at least 175.

-Yes.

-175 on the nose.

So, what we want to do is just get a little more browning on the top of this skin, so we're going to run it under the broiler.

The rack is about 6 inches beneath the broiler element.

It's only going to take 2 to 3 minutes for this to get gorgeous and golden.

♪♪ Let's take a peek.

Oh!

If you wouldn't mind.

-Of course.

Oh!

Could it get any better?

The answer is, yes, it can.

-Yeah, that little bit of broiling -- just 2 to 3 minutes -- dries out the surface of the skin and gets it gorgeous, a little bit charred, which I love with that sauce.

Now, we are going to let this rest 10 minutes before we eat it.

It is rippin' hot, and you don't want anyone to hurt themselves.

It's 10 minutes.

-In your element.

-I am.

-Roast-chicken time.

-Oh!

I'm not even going to ask you what kind of piece you want.

I'm automatically going to give you some dark meat and some light meat so you can contrast and compare.

-Sounds like you speak Bridget.

-[Chuckling] I do.

-The aroma -- just amazing.

-Alright.

-I'm going to do over the top.

I can't wait for you to try this.

-Me too.

-You make fun of how much I love roast chicken.

I know you do, too.

-I actually really admire how much you love roast chicken.

Going for a little bit of the breast first.

-Yeah.

It is so juicy.

-It is so juicy.

-And that sauce is so vibrant.

-Mmm!

-It's got a little kick to it.

-That sauce will come back and slap you.

-Mmm!

Not too spicy.

-No.

-Just a little bit.

-Well, it's tempered with that little bit of sour cream.

-Mm-hmm.

-But, oh, my gosh, what a flavor profile.

I don't think cilantro has ever tasted like that for me.

-It's the combination of the cilantro with the warm spices, the cardamom.

-Yes.

-It is just magical.

-You're roasting cilantro.

I don't know that I really have had too much of that flavor, but it's so concentrated.

It took on a completely different flavor.

-And you have to try a little bit of the crisp skin... -Yes.

-...where it got browned.

It's yet a different flavor profile altogether.

-Alright, if I must.

-Mm-hmm.

-Mmm!

Beautifully rendered fat underneath the skin.

Skin is paper-thin and crisp.

-Mm-hmm.

-Julia, this was spectacular.

I absolutely love it.

-I'm so glad you like it as much as I do.

-Thank you so much.

Now, if you want to make this great roast chicken at home, it starts by making a marinade by blending cilantro, jalapeño, and spices.

Roast the chicken with some of the marinade.

Then broil the chicken until the skin is well-browned.

And don't forget to serve with that creamy sour-cream-and-cilantro sauce.

So good.

So, from "Cook's Country," the amazing roast chicken with schug.

-Wouldn't this sauce taste good on a lot of things?

-Yes.

Waffles.

-[ Laughs ] ♪♪ -This is not a sweet potato.

However, it is a true yam.

Now, this is actually a small one.

Sometimes, they grow to be 5 foot long.

They have a hairy bark and a white interior and they're very starchy.

They are not sweet potatoes.

Now we can talk about the things that are truly sweet potatoes.

And there's actually two categories -- those with orange flesh, and those with white flesh.

Now, the orange-flesh variety is the most common here in the U.S.

The white is actually the most popular in the rest of the world.

But let's start with what we're seeing in our supermarkets.

There are three varieties here on the table.

The Beauregard is our favorite.

It is the sweetest and has the most classic sweet-potato flavor.

Next up, we've got the jewel.

It's a little bit less sweet, has a slightly coppery skin, but they're kind of hard to tell apart from each other.

You really need to look at the labels.

Luckily, the red garnet, with the purple skin, is pretty easy to pick out.

This one's almost savory, like, with a squash-like flavor.

These will all work in the same recipes, but if you have a choice, pick the Beauregard.

Good news -- it's the number-one variety in U.S.

supermarkets.

Now the white variety.

They're different for two reasons.

In the orange variety, a lot of the starches have been converted to sugars, and that will do two things.

One, the orange variety are sweeter, and, two, with less starch, they're moister and so they don't really suck up liquid the way these white varieties, which behave, frankly, more like a potato.

If you were to make a mashed sweet potato with these, they're going to soak up a lot of milk.

Now, there are several varieties, and we tasted four that you're going to most likely see in markets.

The white sweet here are a good option.

They've got beautiful white, creamy flesh.

But honestly, if you see these red-skinned Japanese white potatoes, pick them up.

They have this kind of chestnut aroma and chestnut flavor that's absolutely lovely, especially in a mash.

Now, down here, I've got the batata.

Sometimes, you'll see it labeled as "boniato."

It's very popular in the Caribbean and Latin America.

It's okay fried, but it's really pretty dry and not quite as flavorful.

And then, lastly, a little sadly, this is the Okinawa.

Now, it's absolutely gorgeous with this purple flesh, but honestly, it's got the least flavor of anything on the table.

So, white sweet potatoes orange sweet potatoes -- they are not yams.

♪♪ -Panzanella is an Italian bread salad popular in Tuscany and Umbria, and it's made with stale bread.

It's allowed to sit with chopped fresh tomatoes and good olive oil, and the bread just soaks up all that flavor.

Now, today, Lidey is going to make us a recipe for her panzanella salad.

But you're changing up all the flavors.

-I am.

This panzanella is inspired by what's in season in the fall.

So we've got really delicious fall vegetables -- cauliflower and sweet potato -- we've got some blue cheese, and we've got some really special croutons, which I'll tell you about later.

-Okay.

-The recipe starts with roasting our cauliflower and sweet potato.

So I'm going to go ahead and cut this cauliflower in half.

We're only going to need about half a large head of cauliflower.

I'm going to basically cut the core out.

This head of cauliflower is behaving really nicely.

The florets are just falling apart.

That doesn't always happen.

-No.

-We want about 1-inch florets.

-Okay.

-I think when you break them apart, you can't always do it, but you get kind of nicer-looking florets.

-Yeah.

-Once you start using your knife, you get those kind of weird sharp pieces.

So, we're looking for about 3 cups here.

-Okay.

-Right into the bowl.

Then we've got a large sweet potato.

Alright, that looks good.

So, same thing with our sweet potato.

We're going to do about 1-inch pieces.

I like to have kind of nice big chunks in this panzanella.

Okay, right in the bowl.

And then going to grab our rosemary.

I'm using two fresh rosemary sprigs.

-Ooh!

I like the combination -- rosemary and sweet potato.

-It's just so fall.

Your kitchen smells incredible when you're making this.

-Oh, fun.

-So, we've got 2 tablespoons, olive oil.

-Mm-hmm.

-Just drizzle.

1/2 teaspoon, salt.

And 1/4 teaspoon, black pepper.

And I'm just going to use my hands to toss.

It's the best way.

-Yep.

-Especially when you're roasting broccoli, cauliflower.

Anything where you got to get in those nooks and crannies... -Yep.

-...I think your hands are just the best tool.

Alright, so, dump this out onto the sheet pan.

And I'm going to give it one more toss just to get a little bit of oil on that rosemary.

And we'll spread this out.

This is going to go into a 425-degree oven for about 30 minutes, and we'll toss halfway through.

We just want everything to be really nicely and evenly browned.

♪♪ These look good!

You can see these are nice and browned.

-Smell the rosemary.

-You can really smell it.

You can see that rosemary got a little bit crisp.

-Mm-hmm.

-So we're going to take that out.

We don't want to eat that in our salad.

And any of the little pieces of rosemary that are left on the sheet pan are great.

We'll just toss them right in.

-Okay.

-So, we're going to set this aside to cool.

And in the meantime, we're going to get started on our croutons.

-Yeah, I saw this loaf of bread over here.

-Normally, panzanella uses a rustic kind of white bread.

Traditionally, whatever you have on hand.

-Yeah, well, and Tuscan bread traditionally has no salt, so the whole idea behind the salad is, you get all the flavor from all the other ingredients.

-Right.

And you're using leftover stale bread and you're kind of reviving it with the dressing and the juiciness of the tomatoes.

-Yep.

-Here, we're going to use a rye bread... -Ooh!

-...which is really going to add a nice kind of heartiness to the salad.

Rye bread has almost like a malty kind of spiced flavor that's going to go really well with the other -flavors in the salad.

-What a cool idea.

-Yeah.

And what you want to do -- I like to break it into bread.

-You're just going in with your hands.

-Yeah.

You know, you could cut it into even pieces, but I like to break it into like 1-inch pieces by hand, because then you get these kind of irregular pieces that get really nice and crispy.

-Gotcha.

-And it gives it this kind of rustic look and feel, which I love, too.

-Yeah.

So 1 inch.

-About 1 inch, yeah.

-Alright.

Oh, this bread feels nice.

-Yeah.

It's about half a loaf.

We're going to do 4 cups total, if you want to measure.

-Okay.

-Just enough to fit in our skillet all at once.

And a few extra snacks for the chef.

-I know, right?

I'm really showing some restraint by not popping one of these in my mouth.

The crust on this feels so lovely.

-It's so moist inside.

-Yeah.

Alright, 1-inch pieces.

-You did a better job than I did.

These look great.

Over here, I've got 1/4 cup olive oil heating over medium heat.

-You can see it's shimmering.

-Yeah, you can see that shimmer.

And I'm just going to drop these in.

-And this is extra virgin olive oil.

-Extra virgin, yep.

-Oh, and you're -- Oh, I like what I'm seeing.

-Oh, yeah.

Oh, yeah.

-Yeah.

You're gonna skillet-toast the bread pieces.

-Exactly.

And I love doing it in a skillet because you really have a lot of control.

You can really keep an eye on the heat.

-I also love it when you have fresh bread and use a skillet, because the outside gets nice and toasted and golden, but you get a little bit of the chew left on the interior.

-Totally.

We're going to toast these for about 4 to 6 minutes, just kind of tossing every once in a while.

And when I make croutons on the stove, I really like to just keep an eye on the heat and keep adjusting it almost the way you do.

when you're making pancakes.

You find it's getting too hot, you lower it.

As soon as you start to see smoke coming from the skillet, you know you want to turn it down a little bit.

-Okay.

-And if, at any point, the skillet's looking really dry, you can always add a little splash of oil.

-Okay.

-Yeah.

-4 to 6 minutes.

-4 to 6 minutes.

Not long at all.

♪♪ -Okay.

These look perfect.

It's been about 6 minutes.

-They look delicious.

-Here's the fun part.

Lots of salt.

Got to have salt on a crouton.

It's a teaspoon.

Seems like a lot of salt, but once we give this a nice toss, it's going to be just right.

So, we'll dump these out onto a tray, and we're just going to set those aside to cool.

It's okay if they're still a little bit warm, but we just don't want them to kind of wilt the other ingredients in the salad.

-Makes sense.

-The dressing for this salad is kind of my go-to fall salad dressing.

It's a cider vinaigrette.

It's got Dijon mustard, shallots, and maple syrup.

So it's tangy, it's a little bit sweet, and it's just the perfect balanced dressing.

-Okay.

-It starts with 3 tablespoons, cider vinegar... a tablespoon of Dijon mustard.

Next, we're going to add 1 tablespoon minced shallot.

2 teaspoons maple syrup.

-I've never actually put maple syrup into a dressing, but it makes total sense, especially when you're up here in the Northeast.

-Totally.

You know, honey is used often in salad dressings, and maple just has more complexity, and I love the flavor.

-Yeah.

And it goes nicely with cider vinegar.

-So, 3/4 teaspoon salt, and 1/4 teaspoon black pepper.

I'm just going to give this a whisk.

And then, gradually, we're going to pour in 5 tablespoons olive oil.

And this is just going to help the dressing emulsify and become nice and thick.

-And, again, that's extra virgin olive oil.

-Extra virgin olive oil, yes.

♪♪ Alright, Julia.

-Time to put it all together?

-Time to do it.

I've got 3 1/2 cups of lacinato kale in a big bowl.

-I like the lacinato kale.

It has a much more tender texture -than the curly leaf kale.

-Yeah.

Totally agree.

That said, you know, you could use curly kale for this, if that's all you can find.

Alright, we're going to pour about half our dressing over the kale -and we'll set the rest aside for serving.

-Okay.

-I'm going to give this a nice toss before we add anything, just to make sure that kale is really nicely coated.

Next, I'm going to add a thinly sliced pear.

You know, I feel like you see apples in fall salads a lot.

And pear is so good and it adds this juiciness.

It's not crunchy the way an apple is.

And I think it's just going to be really nice.

-Do you have a favorite type of pear?

-You know, a ripe pear is my favorite pear.

-[ Laughs ] -And I mean that.

-Yeah, that's true.

-I think, you know, there are so many kinds of pears, but when you go to the grocery store, they're always rock-hard.

So whatever you can find that's ripe is going to be the right one for the salad.

-Makes sense.

-Next, we're going to add our roasted vegetables, and these have cooled down.

-It looks like so many vegetables at the beginning, -but they really shrunk in the oven.

-I know.

Those nice little pieces of rosemary.

-Oh, yeah!

-And then our croutons.

-Last but not least.

-Beautiful croutons.

That's my kind of salad.

-I'm excited to try this.

-It's just got so many different flavors and textures going on at the same time.

It feels like a real meal of a salad, which I like.

You could serve this on its own, for lunch or dinner, or it's also really nice next to roast chicken.

-Ooh!

-That's kind of my favorite -- -You're talking my language.

-Yeah.

This would also be kind of a fun and different salad to serve on Thanksgiving.

And it doesn't feel like an afterthought kind of salad.

-Right.

-You know, it's special in its own right.

Alright, just making sure those little pieces of pear get all broken up here.

So, we're going to go ahead and put this right on our serving platter.

I like to serve this salad on a platter -so you can really see all the different ingredients.

-Yeah!

-I think it makes for a really nice presentation.

Alright.

Yeah, it's like a mountainous salad here.

-Oh, it's beautiful.

-I'll spread it out a little bit.

And then we've got some finishing touches.

Got 2 ounces of sliced blue cheese.

-Mmm!

-And if you don't like blue cheese, which I know some people don't -- -Yeah, it can be a controversial ingredient.

-Yeah.

You could also use shaved Parmesan.

You could use a nice aged cheddar or Gouda.

-Oh, Gruyère would be perfect.

-Gruyère would be really good.

You want something that's a little bit nutty, a little bit tangy, something with personality to finish this salad.

-Oh, that's beautiful.

-But I love the blue cheese.

-Yeah.

-And then we're going to do about 1/3 cup of pomegranate seeds.

-Awesome.

I love how pomegranate seeds -- 10 years ago, they were a really pretty rare ingredient in our supermarkets.

Now they come already out of the fruit for you.

-Do you buy them seeded?

-Yes.

-Okay.

-Yeah, sometimes I do.

Makes it really easy.

-It makes it really easy, especially if you're just going to sprinkle it on the salad.

We're going to do a final drizzle of the dressing on top.

And this just makes sure everything is really nicely coated.

-What a looker.

-I think so.

You know, this salad's great, too, because so many of these components can be made in advance, and then just assemble it at the last minute.

And it looks very impressive, but it really wasn't that hard to make.

-It looks very impressive.

-I also love all the colors.

It really -- This salad, for me, represents kind of the bounty of fall.

-Yeah.

-Everything.

It's got the bright-orange sweet potato, the red pomegranate seeds, the pear.

-Well, and you really thought about every ingredient.

There's a variety.

Alright, I'm going right in, Lidey.

-Alright, alright.

I'm right behind you.

-Mmm!

Ooh!

That dressing... -I was gonna say the same thing.

-...is really good.

-Mm-hmm.

The maple syrup just brings just enough sweetness to kind of balance with the mustard.

-That's it.

And you say you use this dressing on lots of other salads, like a go-to.

-Oh, yeah.

It's a total go-to.

-Alright, I'm going for some of the roasted sweet potato.

Mm-hmm!

-Gotta try a crouton.

That rye, that little -- the caraway seed.

-Oh!

-Mm-hmm.

-That's good.

I love a salad where you have a couple bites and you still haven't tried everything yet.

Because if it's the same all the way through, it gets really boring.

-It gets boring, but this is -- Every bite is like its own little adventure.

-Yeah!

It is.

Mmm!
